Melissa brings passion, precision, and a deep respect for ingredients to the kitchen at The Golden Rooster. With over 12 years of experience in farm-to-table restaurants across the UK, she specialises in elevating honest, regenerative meats into unforgettable dishes

Greg

Greg is the heart and hands behind the meats at The Golden Rooster. With a butcher’s knife in one hand and a roasting tray in the other, Greg has spent 15 years perfecting the art of transforming large cuts of regenerative meat into show-stopping centrepieces.

Matteo

Specialising in dry-ageing, expert butchery, and slow-roasting, Matteo knows every muscle and joint intimately. Whether it’s a 12kg rib of beef, a whole pasture-raised chicken, or a magnificent lamb shoulder, he treats each cut with precision and respect.
